ITALIAN QUINOA PROTEIN PATTIES

INSTRUCTIONS
- Whisk together the eggs, Italian seasoning, and salt. Stir in the quinoa, panko, parmesan, spinach, garlic, onion, and chopped sun dried tomatoes.
- Heat a large skillet with the olive oil.
- Form the quinoa mixture into 15 patties and pan fry a few of them at a time for 2-3 minutes per side (or until golden brown).
