TURKEY AND TOMATO PANINI

INGREDIENTS
  • 1 tbsp mayo
  • 1 tbsp fat-free Greek yogurt
  • juice from half a lemon
  • 2 tbsp chopped fresh basil
  • 1 tbsp grated parmigiano reggiano
  • salt & freshly-ground pepper
  • 4 slices bread
  • 4 ounces (.25 lb.) oven-roasted deli turkey
  • 1 roma tomato, sliced
INSTRUCTIONS
  1. In a small bowl, mix together the mayo, yogurt, lemon juice, basil, and cheese. Season to taste with salt and pepper.
  2. Spread 1/2 of the mixture on each slice of bread. Arrange the tomato slices on one piece, and the turkey on the other. Close the sandwich.
  3. Press in a hot skillet for 3 minutes, or until golden brown.
