THUMBPRINT FRUIT FILLED COOKIES

INGREDIENTS
  • 2 1/3 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup butter (softened)
  • 1/4 cup granulated sugar
  • 2 egg yolks
  • Variety of favorite preserves/jams
INSTRUCTIONS
  1. Preheat oven to 350 degrees.
  2. Sift flour and salt. Set aside.
  3. Cream butter until smooth; add sugar and beat until fluffy.
  4. Add egg yolks and mix until combined.
  5. Add dry ingredients and mix until smooth.
  6. Shape dough into 1 inch balls. Place on an ungreased cookie sheet.
  7. Press thumb into the center of the ball to make a divot deep enough to hold the preserve.
  8. Add the preserve in the center carefully; do not to overfill or the preserve will bleed out of the center and over the sides of the cookie.
  9. Bake for 18-20 minutes. Cool on a cookie sheet for 2 minutes. Transfer to wire racks; cool.
