THUMBPRINT FRUIT FILLED COOKIES
INGREDIENTS
INSTRUCTIONS
- Preheat oven to 350 degrees.
- Sift flour and salt. Set aside.
- Cream butter until smooth; add sugar and beat until fluffy.
- Add egg yolks and mix until combined.
- Add dry ingredients and mix until smooth.
- Shape dough into 1 inch balls. Place on an ungreased cookie sheet.
- Press thumb into the center of the ball to make a divot deep enough to hold the preserve.
- Add the preserve in the center carefully; do not to overfill or the preserve will bleed out of the center and over the sides of the cookie.
- Bake for 18-20 minutes. Cool on a cookie sheet for 2 minutes. Transfer to wire racks; cool.
