  • 2 cups cooked rice white or brown
  • juice of one half lemon roughly 1 tablespoon
  • ¼ teaspoon salt to taste
  • 1 cup tomatoes diced, halved, or chopped
  • 1 cup diced cucumber
  • 1 tablespoon olive oil
  • ½ teaspoon salt to taste
