CHEESEBURGER WITH AVOCADO-BROCCOLI SLAW

INGREDIENTS
  • 2 tbsp salted sunflower seeds
  • 2 tbsp white wine vinegar
  • 2 tbsp extra-virgin olive oil
  • Salt and pepper
  • 2 cups broccoli slaw mix
  • 1 avocado, diced
  • 3 radishes, thinly sliced
  • 1 cup sprouts
  • 1 scallion, thickly sliced
  • 1 pound ground beef
  • 4 sesame hamburger buns
  • Mayo, for serving
INSTRUCTIONS
  1. Whisk the sunflower seeds, vinegar, and olive oil in a large bowl, season with salt and pepper. Add the slaw mix, avocado, radishes, sprouts, and scallions, toss gently.
  2. Lightly mix the ground beef with a big pinch of salt. Form into 4 balls, then flatten.
  3. Heat the grill. Add the patties and cook until desired doneness.
  4. Place the burgers on the bun bottoms. Top with mayo, the broccoli slaw, and the bun tops.
