  • 1 tablespoon olive oil
  • ½ cucumber – seeded with skin removed
  • 1 cup plain Greek yogurt – full-fat recommended
  • 3 cloves garlic – minced
  • 1 tablespoon red wine vinegar
  • 2 teaspoon fresh dill – minced
  • salt + pepper – to taste
  • 4 pita or flat bread
  • 2 tomatoes – quartered or sliced
  • ¼ red onion – thinly sliced
