ITALIAN QUINOA PROTEIN PATTIES

INGREDIENTS
  • 3 eggs
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 2 cups cooked quinoa
  • 1 cup panko bread crumbs
  • ¼ cup parmesan cheese
  • 4.5 oz frozen chopped spinach, cooked
  • 2 cloves garlic, diced
  • ½ cup diced onion
  • ¼ cup chopped sun dried tomatoes
  • 1 tbsp olive oil
INSTRUCTIONS
  1. Whisk together the eggs, Italian seasoning, and salt. Stir in the quinoa, panko, parmesan, spinach, garlic, onion, and chopped sun dried tomatoes.
  2. Heat a large skillet with the olive oil.
  3. Form the quinoa mixture into 15 patties and pan fry a few of them at a time for 2-3 minutes per side (or until golden brown).
  4. Enjoy!
