SAUSAGE AND RED PEPPER SOUP WITH EGG NOODLES

INGREDIENTS
  • 1 lb. regular pork sausage
  • 1 medium yellow onion, diced
  • 3 large red bell peppers, diced
  • 4 large garlic cloves, minced
  • 2 T. unsalted butter
  • 1/3 c. all-purpose flour
  • 8 c. low sodium chicken broth
  • 1 package (12 oz.) frozen Egg Noodles
  • 1.5 tsp. kosher salt
  • 1 tsp. dried basil
  • 1 tsp. dried thyme
  • 1 tsp. dried savory
  • 1 tsp. freshly ground black pepper
  • 2 oz. fresh spinach, chopped (use more if you like)
