PIZZA COTTAGE CHEESE GRILLED CHEESE

INGREDIENTS
  • 2 slices sandwich bread
  • 2 tablespoons cottage cheese
  • 2 tablespoons pizza sauce
  • ¼ cup shredded mozzarella
  • ½ teaspoon Italian seasoning
  • 1 tablespoon butter – for toasting the bread
  • Optional: pinch of garlic powder, red pepper flakes, or fresh basil for serving
INSTRUCTIONS
  1. In a small bowl, mix together: cottage cheese, pizza sauce, shredded mozzarella, Italian seasoning, Optional: add a pinch of garlic powder or chili flakes.
  2. Spread a thin layer of butter on one side of each slice of bread. This will be the outside of the sandwich for that golden crunch.
  3. Place one slice of bread butter-side down. Spread the cottage cheese mixture evenly over the top. Place the second slice of bread on top, butter-side up.
  4. Heat a nonstick skillet over medium heat. Place your sandwich in the pan and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and crispy outside, and gooey inside.
  5. Let it rest for a minute, then slice in half. Sprinkle with extra herbs or red pepper flakes if you want. Grab a plate, maybe a little extra pizza sauce for dipping, and enjoy.
