
PIZZA COTTAGE CHEESE GRILLED CHEESE
INGREDIENTS
INSTRUCTIONS
- In a small bowl, mix together: cottage cheese, pizza sauce, shredded mozzarella, Italian seasoning, Optional: add a pinch of garlic powder or chili flakes.
- Spread a thin layer of butter on one side of each slice of bread. This will be the outside of the sandwich for that golden crunch.
- Place one slice of bread butter-side down. Spread the cottage cheese mixture evenly over the top. Place the second slice of bread on top, butter-side up.
- Heat a nonstick skillet over medium heat. Place your sandwich in the pan and cook for 3–4 minutes per side, pressing gently with a spatula, until golden brown and crispy outside, and gooey inside.
- Let it rest for a minute, then slice in half. Sprinkle with extra herbs or red pepper flakes if you want. Grab a plate, maybe a little extra pizza sauce for dipping, and enjoy.
