Open-Faced Toast with Arugula & Fried Egg

OPEN-FACED TOAST WITH ARUGULA & FRIED EGG

INGREDIENTS
  • 4 slices bread
  • 4 eggs
  • 1 cup arugula
  • 1/4 cup plus 2 tablespoons olive oil
  • Pepper
INSTRUCTIONS
  1. Toast bread
  2. Heat one tablespoon of oil in non-stick skillet
  3. Add one egg and fry over medium heat
  4. Mix arugula with, at most, 2 tablespoons of oil and place 1/4 cup on to each piece of toast
  5. Top each piece of toast with fried egg and pepper
