OPEN-FACED TOAST WITH ARUGULA & FRIED EGG
INGREDIENTS
INSTRUCTIONS
- Toast bread
- Heat one tablespoon of oil in non-stick skillet
- Add one egg and fry over medium heat
- Mix arugula with, at most, 2 tablespoons of oil and place 1/4 cup on to each piece of toast
- Top each piece of toast with fried egg and pepper
