FRITTATA SANDWICH

INGREDIENTS
  • 12 eggs
  • 1 ½ cups cottage cheese
  • 3 oz bacon, chopped
  • 1 bell pepper, diced
  • 4 green onions, diced
  • 1 Tbsp butter
  • salt and pepper to taste
  • English muffins or bagels
INSTRUCTIONS
  1. Preheat your oven to 375 degrees Fahrenheit.
  2. While the oven is preheating, sauté the bacon and bell peppers in the butter, salt and pepper.
  3. Crack the eggs into a bowl and whisk until combined.
  4. Add cottage cheese and sautéed veggies. Stir to combine.
  5. Mix in green onions and season with salt and pepper.
  6. Spray a 9×13 pan with olive oil and pour in the egg and veggie mixture.
  7. Bake at 375 for 30 – 40 minutes. If the eggs start getting brown on the top, cover with aluminum foil and continue cooking.
  8. Allow to cool for 5 minutes. Cut into squares and place on bread of your choice.
  9. Serve warm or freeze for future use.
